Easy Flourless Peanut Butter Jelly Cookies

I’m knee deep in potty training over here with my middle child, which means cookies are being made along with bribes. You’ve probably seen the viral 3 ingredient peanut butter cookie recipe floating around on the interwebs, and this is my riff on that. It takes 6 pantry staples and an optional 7th ingredient, which I can personally attest takes these over the top and will get you results (in potty training at least).

Here is what you’ll need to make easy flourless peanut butter jelly cookies:

Easy Flourless Peanut Butter Jelly Cookies

  • 1 Egg
  • 1 Cup Peanut butter (not the oil-on-top kind)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt (optional)
  • 1/4 cup blueberry or grape jelly or preserves
  • Cooking spray

Prep a cookie sheet with cooking spray and preheat your oven to 350 degrees.

Combine all the dry ingredients. I like to toss ’em all in a stand mixer to save time, but you can use a whisk and a large bowl. Add the peanut butter then egg and stir until just blended.

To form the cookies, take about a tablespoon and a half of the cookie dough and flatten it in your palms like a thick tortilla. Scoop 1/2 teaspoon of the jam into the center and pinch the edges unto themselves and roll the dough into a ball. Place the balls at least 3 inches apart, as they will spread. Bake for 12 minutes and allow them to cool on the sheets before moving them.
